Bread Suggestions and Caveats
Warning!
The Asylum does not own a bread machine! These recipes typically make
two fairly large loaves. Since this is a hobby, the Baker uses a technique best
described as loose!
To attempt any of these in a machine, the quantities should probably be downsized to about
the 40% mark to avoid a mess!

The comment is often heard "I tried to bake bread but it never rises for me." Your
Webmeister wonders if that comes from folks using heavily chlorinated water. If you are
supplied with treated water, try letting the water you plan to use sit out for several
hours, or boil it for a minute and let it cool.

It is also very easy to kill yeast by
getting the water too hot. The water should never be over about 130
degrees F (55º C.)

On the other end, chilly temperatures and drafts will drag out the
rising process for hours. In the summer, this is seldom a problem. In winter in temperate
climates, park the covered bowl near a radiator, wood stove, or oven where the air
temperature will run toward 80º F (27º C).

The foaming of the yeast dissolved in water and
sugar is confirmation that the yeast is active.
